Old-timers will tell you that Southside’s original sausage recipe was spicier, with more cayenne and cracked black pepper. In tribute to them, and our own spicy history, we’ve brought that hotter recipe back and named it for the year of Southside’s birth – 1882. This is a premium all beef sausage, coarsely ground in a natural pork casing, made fresh by us, in-house daily just as we’ve done it for over 135 years!

All online orders are filled using 13.3oz packages.

    i expected more kick , glad i bought the sausage sampler , this one i wouldnt buy again, but loved the jalapeno cheddar the garlic, and the original summer. perhaps its my taste but i didnt get the hot spice i expected

    I remember enjoying the Elgin Hot Gut Sausage when I lived in Austin 30 years ago. For parties I would steam 20 lbs. of rope in large pot with Shiner Bock as the liquid below. Then cut and serve in white bread wraparound with yellow mustard. Simple, delicious, no plates, wraparound in one hand, beer in the other!

    This is the best sausage if like spicy, hot sausage. I’ve been eating this sausage since I was a child and my family would travel down to Elgin to visit family. When I found I could order this sausage online, I jumped on it! I will be buying and eating this sausage for years to come.

I fell in love with it and recently visited Elgin and had it almost daily there at your restaurant. I received email of the “hot” 1882 Sausage and this one is my favorite of all !! Don’t change a thing.

    Go ahead and try all the barbecue joints in Texas, and you’ll come back here for their sausages. They are just amazing! Perfectly spiced coarse grind with no chalky dry texture-the ideal blend of spice, texture and juiciness.

    I visited elgens southside market on vacation and have been purchasing my sausage online since. I brag about the explosion of flavor and do a giddy dance when I pull it from the freezer for dinner.
