Old-timers will tell you that Southside’s original sausage recipe was spicier, with more cayenne and cracked black pepper. In tribute to them, and our own spicy history, we’ve brought that hotter recipe back and named it for the year of Southside’s birth – 1882. This is a premium all beef sausage, coarsely ground in a natural pork casing, made fresh by us, in-house daily just as we’ve done it for over 138 years!

    This is the best sausage if like spicy, hot sausage. I’ve been eating this sausage since I was a child and my family would travel down to Elgin to visit family. When I found I could order this sausage online, I jumped on it! I will be buying and eating this sausage for years to come.

    I ordered this online for my “Mexican Mama” because she had it when growing up near Elgin, Texas. She remembers going there and having your fresh sausage and bread. Best memories ever ! I fell in love with it and recently visited Elgin and had it almost daily there at your restaurant. I received email of the “hot” 1882 Sausage and this one is my favorite of all !! Don’t change a thing.

    Go ahead and try all the barbecue joints in Texas, and you’ll come back here for their sausages. They are just amazing! Perfectly spiced coarse grind with no chalky dry texture-the ideal blend of spice, texture and juiciness.

    i expected more kick , glad i bought the sausage sampler , this one i wouldnt buy again, but loved the jalapeno cheddar the garlic, and the original summer. perhaps its my taste but i didnt get the hot spice i expected

    I remember enjoying the Elgin Hot Gut Sausage when I lived in Austin 30 years ago. For parties I would steam 20 lbs. of rope in large pot with Shiner Bock as the liquid below. Then cut and serve in white bread wraparound with yellow mustard. Simple, delicious, no plates, wraparound in one hand, beer in the other!

    Grew up eating this as a kid (so like 50 + years ago) as my Father was from Manor and we always stopped at the old place in down town every trip when we were any place close. I recall the saw dust floors and the great smell of the old place in town. Move out of Texas about 40 years ago when I Left TI to try my luck in Silicone valley. Have recently been flying into Austin (The old Bergstom AF Base) – Well, that is a short drive to the new place on 290. The young ones working there have no idea what I want when I ask for “Hot Gut” – But we always figure it out. Seem like what I remember from 50 years ago at the old place. And recently, I found the Mail Order service – This will be my second order. It works out great and also tastes great. Kind of expensive, but I have plenty of $$$$ – Ha Ha Ha. Anyway, my 2nd order of hot gut is on the way – Can’t wait for the oder to arrive !

    Omg I am 100%italian from south philly. This Sauage is hot and very balanced with favor. Just get yourself hard Italian bread and don’t use anything else. It’s juicey. You get no fat after taste. Foodie here. It’s chewy I like that. I live outside philly now. Bucks co. I just wish the shipping was cheaper. The taste stays with your mouth for awhile.

    Born and raised in Bastrop, whenever dad would bbq, brisket, ribs, chicken, deer, quail, etc., he throw in Elgin hot sausages. Fast forward 25 yrs later living in N. California, and while on my laptop found out bout Southside market website and life has been better since. Even got some of my coworkers ordering and enjoying now. I kinda remember them a lil bit hotter, but my mother tells me they had to tame em down for alot of the people moving in to my beloved central Tx. I just wish they were a might hotter.

    Awesome product. Like another viewer, I’m a chilehead and would love to see a hotter version of the same product. The challenge would be to add heat without
    tainting the flavor profile. Pepper flakes? Pure liquid capsaicin? I’ll still purchase the 1882 if you never mess around with tweaking it.
