Old-timers will tell you that Southside’s original sausage recipe was spicier, with more cayenne and cracked black pepper. In tribute to them, and our own spicy history, we’ve brought that hotter recipe back and named it for the year of Southside’s birth – 1882. This is a premium all beef sausage, coarsely ground in a natural pork casing, made fresh by us, in-house daily just as we’ve done it for over 138 years!

Gluten Free. MSG Free.
All online orders are filled using 13.3oz packages.

    Slightly Hot ! Great taste though ! The casing is too tough. You should make a hotter version and a XXX Hot version,

    I read a lot of comments stating that your sausage taste great but in the hot category it falls way too short! Why not have a sliding scale from hot, then Xtra hot then a XXX hot. By doing this I believe the sale of your sausage links would quadruple !!!! Everyone is into the hot side of things these days. Man, you’re in Texas ! If anybody should be able to do HOT it should be you guy’s!
    Your casing hold up well but seems to be too tuff. I find myself cutting the casing off the meat once it’s done cooking. I ordered the 20 pack of your 1882 HOT BEEF which wasn’t faintly hot . Flavorful but not hot! I do like the fact that there’s no large fillers and the beef is finely ground.
    I WOULD LOVE TO ORDER ANOTHER TWENTY PACK OR A 40, 60, 80-100 PACK IF THEY WERE REALLY HOT!

    I know that you can’t make it hotter for everyone, so keep your original hot, but just make a XX and a XXX for those hot heads like me, adjusting the recipe or making a new recipe altogether. Something to seriously consider.

    i expected more kick , glad i bought the sausage sampler , this one i wouldnt buy again, but loved the jalapeno cheddar the garlic, and the original summer. perhaps its my taste but i didnt get the hot spice i expected
