Known by locals and old-timers as “Elgin Hot Sausage” or simply “Hot Guts”, this is the sausage that put Southside on the map. All beef, coarsely ground in a natural pork casing, and seasoned with cracked black pepper. It is what we are known for and is our best seller. We offer it here in a larger quantity for those needing to feed a lot of hungry folks. Perfect for restaurants, catering events, family reunions, fundraisers, and other large gatherings. Each order of 50 lbs. yields 240 fully smoked links!

**SHIPPING NOTICE** Due to increased volume, we are making all bulk items when ordered. This can mean up to a 2 week delay from the date of your order to the date we can ship it, depending on production timelines and the date ordered. If the item is “back ordered” when in your cart, then there will be a shipping delay.

Orders will be filled using bulk packaging of either 2.5 lb. or 5 lb. bags.

    My dad first took me to Southside when I was around 6-7 years old. He drove a truck for Fairmont Foods out of Giddings and I rode with him sometimes and we would always stop, sausage on red butcher paper, bulk crackers and orange soda, doesn’t get any better, now at 73 years young, still making special trips from West Texas, worth the trip

    MY wife and I have made two trips from Yuba City Calif 2018 -2019 and it being her first time she said it’s the Best she has ever had. I am from Austin and have been gone for years but I make it the first stop and our last stop. I try to take home at least 50 lbs back to Calif and cook at times we Family and Friends come over. Thanks and I wish wee had one in Calif. P.S I Loved the Beef Ribs that I had on the one Friday in July 2019.

    I have been eating it since 1968. But now that I’m older i can’t drive to Elgin to buy some..and the price can’t afford it. .love it.
