Fresh Original Beef Rope Sausage
Known by old-timers as “Elgin Hot Sausage” or simply “Hot Guts”, this is the sausage that put Southside on the map. Now available to order in rope form exactly as we sell it fresh in our meat markets. Unlike the shorter links, each fresh (raw) rope measures approximately 44-48 inches long and weighs 2 lbs. Seasoned with cracked black pepper, it is all beef, coarsely ground in a natural pork casing. This is our signature item, made fresh in-house daily for a level of quality, taste, and enjoyment you can’t find anywhere else. Since 1882.
Gluten Free. No MSG.

I grew up on this sausage. I’ve lived throughout in different parts of the United States and nowhere but in the Elgin Texas could you get this wonderful sausage. Now I’m back living in Houston and every time we get through Elgin or through Bastrop now we buy sausage and bring home with us. Best sausage and Texas.

I was turned on to Elgin “hot guts” about 30 years ago when I lived in Austin area. In 2012 I moved to KY but make several trips to TX to see kids n grandkids each year. I make many special trips to Elgin to get the best sausage around and take many many pounds back to KY. Seems I have more friends now! LOL. Love it and brisket too. Thanks Phil.

Just grilled it up for the first time with some homemade Tex-Mex pinto beans and wow. Love the flavor, it’s unique and ready tasty. Ok I’ll say it, one of the best sausage I’ve ever had. Diner transported me back to recon in my Oregon back yard. Next time I’ll smoke it the finish it on the grill. Can’t wait.

I grew up in Elgin, TX for 26 years. I have eaten an enormous amount of Southside Market sausages and other meat items that the market sold. I still travel back to Elgin, TX whenever I have an opportunity to visit. I always go to the Southside Market to enjoy eating some really good sausages and other barbecued items on their menu. I live in Garland, TX now; and, just cannot find any local barbecue places that serve really good sausages or or barbecued items. So, i will always buy sausages and other barbecued items to bring back home to Garland. I will always be traveling to Elgin, TX when I finally need to eat some really good sausages and barbecue. I will even be ordering online when I can’t make a trip to Elgin, TX.

This sausage is the best I have eaten. I cooked a link in the oven the first night after I received it because it was raining and I could not put it on the pit. I cannot wait to put a link on the pit because if it is that good right from the oven then it is going to be hard to beat! .. and the grease is even tasty and smells delicious so I keep a little to put into some pinto beans.

Or at least my world. I have been eating this sausage that I know of and remember since I was old enough to walk. That was about 1957 or so. I can think about it and start drooling like Pavlov’s dogs. I love this stuff and it never disappoints. I wished that I lived close enough to go in and buy it at the counter.
