Southside Bold Brisket Enchiladas

Take your next meal to new heights with our spin on a Tex-Mex favorite! We start with our USDA Beef Brisket, fresh veggies, and traditional spices. Then we add in the flare of our Texas Bold BBQ Sauce for a meaty, spicy dish worth savoring. This recipe was first crafted by “Queenie”, a longtime team member here at Southside who has a reputation for excellent customer service and top notch food!

Time Needed:
Prep: 35 – 40 minutes (including assembly)
Cooking time: 25 – 30 Minutes

Ingredients:
  • 2 lbs. Southside USDA Beef Brisket (fully smoked)
  • ½ large white onion (chopped)
  • 2 cloves chopped garlic
  • ½ tsp cumin
  • ½ tsp seasoned salt
  • 1 cup vegetable oil
  • 20 – 25 white corn tortillas
  • 2 lbs. cheddar cheese (shredded)
  • 2 – 14 oz. bottles Southside Texas Bold BBQ Sauce
  • Optional: Chives, Sour Cream, Salsa
Directions:

Roughly dice brisket into bite size pieces. Combine meat with onion, garlic, cumin and salt. Heat in large skillet over medium until all ingredients are hot. Set aside.

In a medium skillet warm vegetable oil and, using tongs, fry tortillas one at a time for no more than 10 seconds each. Set aside.

Set up an assembly line on your counter in this order: tortillas, Texas Bold BBQ Sauce, clean plate, meat mixture, cheese.

Dip one tortilla in the Texas Bold sauce and lay flat on the clean plate. Add a small portion of meat lengthwise and top with cheese. Roll up and place in a baking pan.

Repeat steps with each tortillas, nesting each finished enchilada in the baking pan, side by side.

Once all are rolled, top the entire dish with Texas Bold sauce and any remaining meat. Sprinkle with cheese and bake uncovered for 25 – 30 minutes at 350F.

Serve warm topped with fresh chives, green onion, sour cream, and salsa (all optional).
